Honey Halloumi Tacos

Recipe: Honey Halloumi Tacos with Pea Shoots and an Avocado & Tomato Salsa

250g Halloumi 125g baby plum tomatoes 1 lime 1 red chilli 20 g honey (about 4 teaspoons) 1 avocado 6 plain tortillas 75g natural yoghurt 40g pea shoots

  1. Preheat your oven to 200°C (or 180°C if it’s a fan oven). Cut the halloumi into 2cm chunks. To prep your veg, halve the baby plum tomatoes, zest and juice the lime and roughly chop the coriander (stalks and all). Halve the red chilli lengthways, deseed then thinly slice.

  2. To make the salsa combine the tomatoes, lime juice and red chilli in a medium bowl, season with salt and pepper and mix well. Halve the avocado and remove the stone. Use a tablespoon to scoop out the flesh onto a board. Cut into 2cm chunks and mix the avocado and coriander into your tomato salsa.

  3. Heat a large frying pan on medium-high heat with a drizzle of oil. Once hot, fry the halloumi until golden, which should take about 4-5 minutes. Stir regularly. Drizzle in the honey 1 minute before the end and stir to coat.

  4. Next, heat the tortillas on the middle shelf of the oven (no need for a tray) for 1-2 minutes. Allow for 2-3 per person, depending on how hungry you are. Meanwhile, in a small bowl, combine the yoghurt and lime zest.

  5. To build your tacos, pile the tortillas with the pea shoots, avocado & tomato salsa and honey halloumi. Drizzle with lime yoghurt and serve.
